My boyfriend loves red velvet cupcakes.
So, I decided to make some for his 24th Birthday as a surprise!
It took me a while to look for that perfect
red velvet recipe that suits me.
My criteria was that it should be (1) Easy, (2) Inexpensive
and (3) having locally available ingredients.
There are a lot of recipes online
and there are deceitful recipes that are labeled
'easy' but are relatively not.
The recipe I used to make my delightful
red velvety treats was from My Food Notebook.
A blog that also features other fun and easy recipes.
I followed the recipe for the cake batter to the detail.
3 cups all-purpose flour
2 tsp unsweetened cocoa powder
¾ tsp salt
3 large eggs, at room temperature
¾ cup butter, at room temperature
2¼ cups granulated sugar
1½ tsp vanilla extract
1 ounce bottle of red food coloring (2 Tbsp.)
1½ cups buttermilk*
1½ tsp baking soda
1½ tsp vinegar
2 tsp unsweetened cocoa powder
¾ tsp salt
3 large eggs, at room temperature
¾ cup butter, at room temperature
2¼ cups granulated sugar
1½ tsp vanilla extract
1 ounce bottle of red food coloring (2 Tbsp.)
1½ cups buttermilk*
1½ tsp baking soda
1½ tsp vinegar

As for the Butter Cream Frosting, I didn't use the recipe found on the My Food Notebook website. The reason for this is that the frosting used required me to cook in a saucepan which I thought complicated things. My lazy brain was convinced that there has got to be a no-cook way to create this frosting!
And my sly mind proved me right -
There was a no cook version of making butter cream frosting and
I found it on Savory Sweet Life Website!
CLASSIC AMERICAN BUTTER CREAM FROSTING
- 1 cup unsalted butter (2 sticks or ½ pound), softened (but not melted!) Ideal texture should be like ice cream.
- 3-4 cups confectioners (powdered) sugar, SIFTED
- ¼ teaspoon table salt
- 1 tablespoon vanilla extract
- up to 4 tablespoons milk or heavy cream
Instructions
- Beat butter for a few minutes with a mixer with the paddle attachment on medium speed. Add 3 cups of powdered sugar and turn your mixer on the lowest speed (so the sugar doesn’t blow everywhere) until the sugar has been incorporated with the butter. Increase mixer speed to medium and add vanilla extract, salt, and 2 tablespoons of milk/cream and beat for 3 minutes. If your frosting needs a more stiff consistency, add remaining sugar. If your frosting needs to be thinned out, add remaining milk 1 tablespoons at a time.
Now the question is, do EASY RECIPES yield AWESOMELY TASTING cupcakes?
The answer is ----- YES!!!
I am superbly happy and satisfied with my cupcakes!
I dressed them up with colorful cupcake paper cups,
Avenger's Themed toppers, and topped them off with sprinkles.

Note: The Avenger's Cake toppers' layout were done by me as well.
Notice how I personalized them to match my theme.
Those who were able to taste my cupcakes were satisfied with the taste!
